There are different versions of the story about the origin of the famous sweet 't Haagsche Hopje. One Hendrik Hop, for example, is said to have left his cup of coffee with cream and sugar on the stove overnight. The next morning this had turned into a hard lump, which tasted delicious!
The Grand Cru Haagse Hopjes Truffles are filled with a ganache of Haagsche Hopjes with a coating of Sao Palme 43% milk chocolate.
