Blend of Pinot Gris maceration (orange) and direct press Dornfelder (red) Style: LIGHT COOL RED WINE
50% PINOT GRIS 2022, from ALSACE (France) with sandstone and granite as a substrate and 50% DORNFELDER 2023 (Germany) with porphyry rock/clay as a substrate.
Pinot gris: Maceration by semi-carbonic method for 4 weeks without pigage. Then pressed and transferred without debourbage into bordelaise for fermentation. Dornfelder pressed 11 hours after picking Primary fermentation in stainless steel followed by wood aging (220L) (on coarse lees) until assembly.
All wine is without added sulfur or other agents. And without methods such as: débourbage, pigeage, delestage, pied de cuve, ...
