This is a blend of red wine and white wine.
The red wine is direct press from Dornfelder from Rheinhessen region in Germany (porphyry rock). This was picked in early September last year. This is to ensure that some freshness is retained. These were then crushed (with the feet) and immediately pressed.
but the skin of the Dornfelder is so brightly colored that it will give off a lot of color even without skin softening. Primary fermentation in stainless steel and then aging in 220l wooden barrels

The white wine in Pinot Blanc. From the Baden region of Germany (lime granite). This was picked in mid-September. Was immediately pressed as well. Elevation was in stainless steel.

This wine is a dark rosé style where fruitiness is in the foreground.

All wine is without the addition of sulfur or other agents.
